Swiss cheese is a hard cheese variety belonging to the group of rennet with a high temperature of the second heating. Swiss cheese is made in the form of a low cylinder with a diameter of 65 to 80 cm and a height of 12 to 18 cm. The mass of one cheese is from 40 to 90 kg, sometimes up to 130. It has a strong even crust (film), which fits tightly to the surface with traces of fabric used in the cheese making process. Perhaps a slight wetting of the surface. The consistency is plastic and uniform throughout the thickness of the cheese; as a rule, there are large, up to 4 cm, round or oval cavities (eyes) formed as a result of the release of carbon dioxide by bacteria. Eyes may not be present in certain areas of the cheese.
Cheese has a mild spicy sweet taste and pronounced aroma.
